White Chocolate Chip Macadamia Nut Cookies

So I made a ginormous batch of cookies for Christmas to give to family, friends, and all the people my mom owes gifts to...


Literally everyone loved these cookies which made me super happy! And I swear my little brothers eat 10 of them a day because they keep disappearing from the counter. Anyway, I adopted this recipe from (http://www.melskitchencafe.com/). I actually split the recipe into two batches because all the ingredients wouldn't fit in my mixer. So...here is what I used for this massive batch of WCCMN cookies:
  • 3 cups butter, softened
  • 2 1/4 cup granulated sugar
  • 3 cup packed light brown sugar
  • 6 teaspoons vanilla extract
  • 6 large eggs
  • 9 cups all-purpose flour
  • 3 teaspoon baking soda
  • 24 ounces white chocolate chips
  • 4 cup macadamia nuts, coarsely chopped (a mix of unsalted, sea salt, and coconut covered)
Directions:
  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, beat together the butter, granulated sugar and brown sugar until the mixture is well-combined.
  3. Add the vanilla and eggs and beat until the mixture is creamy and light in color (until you hear the whipping sound)
  4. Stir in the flour and baking soda and mix until just a few streaks of flour can be seen
  5. Add the white chocolate chips and macadamia nuts and mix with your hands! 
  6. Scoop balls of dough onto silpat or parchment lined baking sheets, 1 to 2 inches apart.
  7. Bake for around 6-9 minutes. 


They are SO easy to make! And on top of that they are chewy and flavorful...I just love them.
